# Directions:

01 - Heat a nonstick skillet over medium heat and add olive oil. Sprinkle half of the crumbled feta into two circles roughly the size of the bread slices directly on the skillet.

Flip carefully and cook 1 additional minute for soft yolks or longer to your preference. Remove from skillet and set aside.
03 - Butter one side of each bread slice. Place two slices, buttered side down, on a clean surface and layer each with two slices of cheddar or mozzarella cheese. Top each with a feta-fried egg. Cover with remaining bread slices, buttered side up.
04 - Wipe skillet clean, return to medium heat, and grill sandwiches for 2–3 minutes per side, pressing gently, until golden brown and cheese has melted.
