14 - 2 green onions, sliced
15 - 1 tbsp sesame seeds, optional for garnish
16 - ¼ cup fresh cilantro leaves, optional for garnish

# Directions:

01 - Heat olive oil in a large skillet over medium heat. Season chicken pieces with salt and pepper, then add to the skillet. Cook, stirring occasionally, until golden and cooked through, approximately 6-8 minutes. Remove from heat.
02 - In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and minced garlic until smooth and well combined.
03 - Drizzle half of the prepared Bang Bang sauce over the cooked chicken. Toss gently to coat all pieces evenly with the sauce.
04 - Divide cooked rice among four serving bowls. Arrange sauced chicken, shredded carrots, cucumber slices, red cabbage, and green onions on top of the rice in each bowl.
05 - Drizzle remaining Bang Bang sauce over the assembled bowls. Garnish with sesame seeds and fresh cilantro if desired. Serve immediately while chicken is warm.

# Expert Advice:

01 -
  • The sauce comes together in literally two minutes and keeps in the fridge for spontaneous drizzling emergencies
  • You can prep all the vegetables on Sunday and have dinner ready in under 15 minutes on busy weeknights
02 -
  • The sauce thickens as it sits in the fridge, so stir in a tiny splash of water if you reheated leftovers and it seems too thick
  • Dont dress the whole bowl with sauce if youre meal prepping, keep everything separate and sauce it right before eating or youll end up with soggy vegetables
03 -
  • Cut all your vegetables before you start cooking the chicken, everything comes together so fast at the end that you dont want to be chopping while your chicken gets cold
  • Taste your sauce before you commit to it, some brands of sweet chili sauce are sweeter than others and you might need more sriracha or less honey
